 Ingredients :

Step 1

  • 2 cups - Italian dressing
  • 2-3 T - olive oil
  • 2 T - lemon juice
  • 1/2 tsp - salt
  • 1/2 tsp - black pepper

Step 2

  • 1 large - zucchini, sliced thin
  • 2 cups - tomatoes, grape style
  • 2 jars - mushrooms, marinated with garlic
  • 1/2 cup - greens onions, sliced thin

Step 3

  • 1/2 lb - salami, italian style, slice into small rectangles
  • 1/2 lb - cheese, provolone, cut into squares
  • 1/2 lb - pepperoni, sliced into medium pieces
  • 1 cup - olives, green with pimento
  • 1 cup - olives, black
  • 1 cup - peppers, pepperconi style, marinated

Step 4

  • 2 bags - salad greens, pre-cut italian style
  • 1/4 lb - parmesan cheese, fresh shredded

 

 
 How to Prepare :

Step 1

Combine all ingredients listed in Step 1 in a bowl, using a wire whisk or blender. Adjust the salt and pepper to taste.

Step 2

Combine all ingredients listed in Step 2 with the blended ingredients from Step 1. Cover and marinate in fridge over night.

Step 3

Prepare all ingredients listed in Step 3. About 30 minutes before serving, combine  them with the marinated ingredients. Stir a couple of times and then check the seasoning. You may need to add more salt, pepper or lemon juice to suite your taste.

Step 4

Right before serving, add the salad greens to the rest of the mixture. Top with shredded parmesan and serve.

Serving suggestion: Serve with breadsticks and a nice glass of wine.
