Ingredients : |

Step 1
- 2 cups - Italian dressing
- 2-3 T - olive oil
- 2 T - lemon juice
- 1/2 tsp - salt
- 1/2 tsp - black pepper
Step 2
- 1 large - zucchini, sliced thin
- 2 cups - tomatoes, grape style
- 2 jars - mushrooms, marinated with garlic
- 1/2 cup - greens onions, sliced thin
Step 3
- 1/2 lb - salami, italian style, slice into small rectangles
- 1/2 lb - cheese, provolone, cut into squares
- 1/2 lb - pepperoni, sliced into medium pieces
- 1 cup - olives, green with pimento
- 1 cup - olives, black
- 1 cup - peppers, pepperconi style, marinated
Step 4
- 2 bags - salad greens, pre-cut italian style
- 1/4 lb - parmesan cheese, fresh shredded

| How to Prepare : |
|
Step 1
Combine all ingredients listed in Step 1 in a bowl, using a wire whisk or blender. Adjust the salt and pepper to taste.
Step 2
Combine all ingredients listed in Step 2 with the blended ingredients from Step 1. Cover and marinate in fridge over night.
Step 3
Prepare all ingredients listed in Step 3. About 30 minutes before serving, combine them with the marinated ingredients. Stir a couple of times and then check the seasoning. You may need to add more salt, pepper or lemon juice to suite your taste.
Step 4
Right before serving, add the salad greens to the rest of the mixture. Top with shredded parmesan and serve.
Serving suggestion: Serve with breadsticks and a nice glass of wine. |
